Couple of questions:

Firstly, can anyone confirm if there is an air tank/reservoir in the system. I think not, but confirmation would be helpful.

And

Does anyone know the approximate working presssure of either the compressor output? Or the bags at rest?

Yes, theres a reservoir behind the drivers side sill. If its anything like the disco the working pressure of the compressor is about 250psi. 2016 Skoda Octavia VRS Estate

A "happy" value on my L322 was @ 180 psi .
