Weird symptoms of a remapped and overheated L322

Hello,

Weird symptom 1:
I recently had my 2006 L322 3.6 tdv8 remapped. Since then every time I put my foot down I get black smoke belching out of the exhaust. There's no loss of power, in fact it pulls harder (ala remap).
I've been told that the black smoke may be the combustion burning too rich with not enough air. I've recently changed the air filter so it shouldn't be that. I read here that the turbo actuators can stick and so with a little WD40, a wire to move them about and some grease they can move freely again. Has anyone else had the same issue? Did the fix above work?

Weird symptom 2:
We've recently driven across Europe and on one particularly steep hill climb I heard what I thought was a belt snap. We drove a little further and then the coolant overheated so much it poured out the top of the coolant tank. We had to leave it for an our to cool down before I could top it up with some coolant and water which I kept doing regularly over the next few hours and days. The coolant level reads normal on the coolant tank but now I get a weird clicking noise from the engine bay. The aircon all works still and the main serpentine belt hasn't snapped. Is this a broken water pump issue or is it the viscous fan?

Other than these symptoms above the car drives fine and doesn't READ that it overheats (although the thermostat may have gone also). If I havent explained something very well or there's more info needed please ask.
