Faire le chabrol Towards the end of your soup instead of completely emptying the bowl the custom is to pour a little red wine into the bowl. The warmth of the soup releases the flavour of the wine which in turn enhances the flavour of the soup.

We lunched today at "Le Chabrol" but just drank the wine straight.  John
